Cooking For Ben

Ben has multiple food allergies. Among those we know about...i.e. All meat except buffalo, wheat, sugar, potatoes,Beans, carrots, celery, yams, rice, gluten free grains, etc.etc....very numerous. We put our energies into focusing on what he CAN eat...it's easier...the list is shorter. Buffalo, butternut squash, spagetti squash, olives, cabbage, broccoli, bananas, granny smith apples, garlic, onions, asparagus among the few. I'm working on a cookbook for him. Here is a sample of a meal he can eat.
We dubbed it...
Buffalo Fajitas with Pan Roasted Butternut Cubes
You take these ing.

and turn it into this.....

Wow! It actually looks good enough to eat!

Yummy! It looks very gourmet, like something you would find in a Greek restaurant or something. Not that I have ever eaten at a Greek restaurant, but it is what I imagine I would find. :) You are very creative, and I know it is not just because you have to be.

Mom I have to say you are truly amazing. You don't think you are that fabulous in the kitchen, but who do you know who goes to the lengths and efforts to create such amazing meals for someone with such horrible allergies.

You rock! Thanks for being such a great poster on our new blog. I will get to it eventually!

That looks awesome... I've always secretly thought Ben just thought up the ultimate way to get gourmet food 3 meals a day for life... poor guy, food allergies would really suck. At least he's lucky enough to a great cook for a mom... maybe that's what keeps him living at home...
